Italian Mushrooms
I was looking to replicate the idea of a Chicago Italian beef sandwich but with the mushrooms i had in the house. This came close.
I used the Sub rolls I made with the previous recipe and topped it with some giardinia (recipe to come). It wasn’t a beef sandwich but it was really good.
Ingredients

6 oz large blue oyster mushrooms

1 tbs vegetable oil

2 sprigs thyme

1 tsp soy sauce

1 tap worcestershire sauce

salt and pepper
Directions

Slice the mushrooms thin

Heat a pan over medium high heat

Add the oil and swirl to cover

Sautee the mushrooms for five minutes tossing regularly until they are moist and meaty

Add the thyme, soy, and worcestershire sauces and sautee another minute or two

Serve on a sub roll speinkled with salt and pepper and topped with giardiniera
